GHOST MERINGUE BITES
MERINGUE INGREDIENTS
2 Large Egg Whites, at room temperature
110g Caster Sugar
¼ tsp Cream of Tartar
½ tsp Vanilla Extract
BASE & DECORATION INGREDIENTS
20–24 Small Round Chocolate Biscuits
100g Milk Chocolate, melted
30g Dark Chocolate, melted
METHOD
1. Preheat the oven to 90°C. Line a baking tray with baking paper.
2. Using an electric mixer, beat the egg whites until foamy. Add the cream of tartar then gradually add the caster sugar, one tablespoon at a time, beating continuously.
3. Continue beating until the meringue is thick, glossy and holds stiff peaks. Beat in the vanilla.
4. Spoon the meringue into a piping bag fitted with a large round nozzle. Pipe tall mounds onto the tray, pulling upwards to create pointed ghost shapes.
5. Bake for 75–90 minutes, until the meringues are dry to the touch. Turn off the oven and leave them inside with the door slightly ajar until completely cool.
6. Spread a little melted chocolate onto each biscuit and gently press a cooled meringue ghost on top. Allow the chocolate to set.
7. Use a toothpick or fine piping bag to add small dark chocolate eyes and mouths.
