It was lovely to cook for everyone who came to The Mix yesterday. I loved the fact that every bowl came back empty, but the best thing was seeing the smiles on people’s faces 🥰
Here is the recipe, it really is very simple! Using a Pressure cooker will be quicker, more energy-efficient, and dare I say, the flavours will be better - but it can also be made on the hob.
Bulgarian Lentil Soup
Ingredients:
🫘 Dry whole lentils (any kind) 200-250 g
🫘 Red split lentils - a handful for thickening
🌶️ 1-2 red bell peppers
🧅 1 onion
🥕 3 medium carrots
🧄 10 cloves garlic (peeled)
🍄🟫 Mushrooms - fresh or pre-soaked dry (save the soaking liquid)
🥫 1 tin (400 g) tomatoes
💚 1 vegetable stock cube or paste
🌻 3-4 tbsp sunflower oil or other cooking oil
🧂 1 tsp Salt, adjust to taste
🧂 A pinch of black pepper
🌿 Parsley 2-3 handfuls, washed and chopped
🍋🟩 Lime / lemon juice
Preparation:
Chop all the veg and mushrooms into small to medium cubes. Blend the tomatoes.
If using dried mushrooms, add the soaking liquid to the pot.
Cooking method (Pressure Cooker):
Put everything in the pot, stir well, and cook for 10 minutes on High pressure. Leave at least 15 minutes without releasing the steam (Natural Pressure Release).
Add the chopped parsley, stir, and serve with a dash of lemon / lime juice.
Cooking on the hob:
Pre-soak the lentils from the night before. Discard the soaking liquid, rinse, and proceed as above, cooking according to lentil packet instructions and stirring occasionally until done (60-120 minutes depending on preferred doneness and type of lentils used).
🥖 Enjoy with fresh bread.
Leftovers can be stored in the fridge or frozen in portions. Reheat well before serving, or better still, let simmer again for a few minutes. This will thicken the soup and result in even better flavours.
