Yes, we sauté. Yes, we stir-fry. But the question is, do you understand what you’re doing when you put that pan on the fire?
Do you understand heat control? Do you know which ingredient goes into the pan first, and why? Do you understand how to balance your sweet, sour, salty, bitter and umami flavours?
Can you prepare your sauces from scratch? Can you tell the difference between the techniques required for a proper stir-fry, a curry, a braised dish or a delicate steamed dish?
And beyond the cooking itself, there’s knife precision, ingredient preparation, timing, texture, presentation and consistency.
Stir-frying is a technique. It is not the entirety of Asian cuisine.
The same way you cannot reduce an entire profession to one thing you see a chef do, you cannot reduce an entire culinary tradition to what happens in a hot pan.
There’s a science behind the technique, knowledge behind the ingredients, and experience behind the final plate.
So, yes, it may look simple when a professional does it. But sometimes, what looks effortless is the result of years of learning and practice.
That’s the difference between simply cooking a meal and truly understanding your craft.
