雪耳菊花枸杞糖水 Snow Fungus, Chrysanthemum & Goji Berry Dessert Soup

The haze is getting bad again, so I made a big pot of something comforting for the family. Simple, light, and the kind of 糖水 many of us grew up drinking at home.

I make extra on purpose. One bowl warm tonight, the rest chilled in the fridge for tomorrow.

What you need (serves 6 to 7)
Dried snow fungus 雪耳, 35g
Mixed 南北杏 (50/50), 15g
Fu Ling cubes 茯苓, 20g
Red dates 红枣, 10, pitted
Pandan leaves, 3, knotted (optional)
Water, 2.5 litres
Rock sugar 冰糖, 100g, adjust to taste
Dried chrysanthemum 菊花, 8g
Dried goji berries 枸杞, 2 tbsp

How I do it
1. Soak the snow fungus for 30 minutes and cut out the hard core.
2. Rinse the almonds, Fu Ling and red dates.
3. Put them in the pot with the water, snow fungus and pandan. Bring to a boil.
4. Lower to a gentle simmer for 35 to 45 minutes.
5. Stir in the rock sugar. Start at 100g and taste.
6. Add the chrysanthemum and goji, turn off the heat and let it steep 3 minutes.

The one thing to remember: don't keep boiling the chrysanthemum. Too much heat makes it bitter.

How to Butterfly a Whole Chicken 🔪🐔

A simple way to prep a whole chicken before roasting, grilling or marinating.

🔪 How I do it
1. Remove the chicken head and neck.
2. Turn the chicken breast-side down.
3. Use kitchen shears to cut along both sides of the backbone and remove it.
4. Open the chicken out.
5. Cut halfway up the breastbone from the inside.
6. Turn it over and flatten the chicken.

That’s it. Your chicken is butterflied and ready for seasoning.

I also keep the neck and backbone for making stock.

Do you butterfly your chicken before roasting?
