Pineapple Yogurt Cake
Soft, Moist and Delicious Homemade Cake
Ingredients
1 container plain yogurt (125 g)
300 g pineapple chunks fresh or canned and well drained
3 yogurt containers all purpose flour (about 375 g)
2 yogurt containers granulated sugar (about 250 g)
1/2 yogurt container vegetable oil (about 60 ml)
3 large eggs
1 packet baking powder (about 11 g)
1 teaspoon vanilla extract
1/4 teaspoon salt
Directions
1. Preheat your oven to 350°F (180°C) and lightly grease a 9 inch round cake pan with butter or cooking spray
2. Dust the cake pan lightly with flour or line the bottom with parchment paper to prevent sticking
3. Drain the pineapple chunks thoroughly and cut any large pieces into smaller bite sized pieces
4. Pour the plain yogurt into a large mixing bowl and keep the empty yogurt container to measure the remaining ingredients
5. Add the granulated sugar to the yogurt and whisk until smooth and creamy
6. Crack the eggs into the mixture one at a time whisking well after each addition
7. Pour in the vegetable oil and vanilla extract then continue whisking until everything is evenly combined
8. In a separate mixing bowl combine the all purpose flour baking powder and salt
9. Gradually add the dry ingredients to the yogurt mixture stirring gently until a smooth thick cake batter forms
10. Avoid overmixing the batter to keep the cake light soft and fluffy
11. Gently fold the pineapple chunks into the batter using a spatula until evenly distributed
12. Pour the prepared cake batter into the greased baking pan and spread it evenly
13. Gently tap the pan on the countertop a few times to remove any large air bubbles
14. Place the cake pan in the preheated oven and bake for 35 to 40 minutes until the top becomes golden brown
15. Insert a toothpick into the center of the cake to check for doneness. It should come out clean or with a few moist crumbs
16. If the cake needs additional baking time return it to the oven for another 5 minutes and check again
17. Remove the cake from the oven and allow it to cool in the pan for about 10 to 15 minutes
18. Carefully loosen the edges with a knife and transfer the cake onto a wire rack to cool completely
19. Once cooled place the pineapple yogurt cake on a serving platter
20. Slice into generous pieces and serve
