Easy Blueberry Lemon Blondies: Chewy Summer Dessert

🍭 INGREDIENTS 🍭
• 1 ½ cups all-purpose flour
• 1 cup granulated sugar
• ½ cup (1 stick) unsalted butter, melted
• 2 large eggs
• 1 teaspoon vanilla extract
• Zest of 1 large lemon
• 2 tablespoons fresh lemon juice
• 1 cup fresh or frozen blueberries
• 1 teaspoon baking powder
• ½ teaspoon salt

👩🏻‍🍳 DIRECTION 👩🏻‍🍳
1. Preheat oven to 350°F (175°C). Line an 8x8 inch (20x20 cm) baking pan with parchment paper, leaving an overhang on two sides, and lightly grease.
2. In a large bowl, whisk together the melted butter and granulated sugar until well combined and smooth.
3. Beat in the eggs one at a time until fully incorporated. Stir in the vanilla extract, lemon zest, and fresh lemon juice.
4. In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
5. Gently fold in the fresh or frozen blueberries. If using frozen, do not thaw them first.
6. Pour the batter evenly into the prepared baking pan.
7. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs (not wet batter).
8. Let the blondies cool completely in the pan on a wire rack before lifting out with the parchment paper and cutting into squares.

Simple, delicious, and ready in minutes.

Easy Blueberry Upside Down Cake: Quick Dessert

🍭 INGREDIENTS 🍭
• 1/4 cup (1/2 stick) unsalted butter, melted, plus 1/2 cup (1 stick) unsalted butter, softened
• 1/2 cup packed light brown sugar
• 2 cups fresh or frozen blueberries (do not thaw if frozen)
• 1 1/2 cups all-purpose flour
• 3/4 cup granulated sugar
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1/2 cup milk
• 1 large egg
• 1 teaspoon vanilla extract

👩🏻‍🍳 DIRECTION 👩🏻‍🍳
1. Preheat your oven to 350°F (175°C). Lightly grease and flour a 9-inch round cake pan, or line with parchment paper for easier inversion.
2. Melt 1/4 cup butter and pour it into the bottom of the prepared cake pan, spreading evenly. Sprinkle the light brown sugar over the melted butter. Arrange the blueberries in a single layer over the brown sugar.
3. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
4. In a separate medium bowl, whisk together the 1/2 cup softened butter, milk, egg, and vanilla extract until well combined.
5. Pour the wet ingredients into the dry ingredients. Mix with a spoon or spatula until just combined. Be careful not to overmix; a few lumps are fine.
6. Gently spoon the cake batter over the blueberries in the prepared pan, spreading it evenly to cover all the fruit.
7. Bake for 35-40 minutes, or until a wooden skewer or toothpick inserted into the center of the cake comes out clean.
8. Let the cake cool in the pan on a wire rack for 10 minutes. Then, place a serving plate upside down over the cake pan and carefully invert the cake onto the plate. Remove the pan and parchment paper (if used) and serve warm or at room temperature.

Your family will love this one!
