🛒 Ingredients
2 whole heads of garlic
2 cans (15 oz each) cannellini or Great Northern beans, drained and rinsed
1 tbsp olive oil (plus more for roasting garlic)
1 medium yellow onion, diced
2 medium carrots, diced
2 celery stalks, diced
4 cups vegetable broth
1 tsp dried thyme (or 3-4 sprigs of fresh thyme)
1 tsp dried rosemary, finely chopped
1 bay leaf
Salt and black pepper, to taste
1 tbsp lemon juice (for a touch of brightness)
Fresh parsley, chopped, for garnish
Olive oil or chili oil, for drizzling
Crusty bread, for serving
👩🍳 Instructions
Roast the garlic
Preheat your oven to 400°F (200°C). Slice the top off each head of garlic to expose the cloves. Place them on a piece of aluminum foil, drizzle with a little olive oil, and season with a pinch of salt. Wrap the foil tightly and roast for 40 minutes, until the cloves are completely soft and caramelized. Let them cool, then squeeze the sweet, roasted cloves out of their skins and set aside.
Sauté the aromatics
While the garlic roasts, heat 1 tbsp of olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Cook for 8–10 minutes, stirring occasionally, until the vegetables are tender and the onion is translucent.
Simmer the soup
Add the roasted garlic, drained white beans, vegetable broth, thyme, rosemary, and the bay leaf to the pot. Stir well, scraping up any bits from the bottom. Bring to a boil, then reduce the heat to low, cover, and simmer for 15–20 minutes to allow the flavors to meld.
Blend until creamy
Remove and discard the bay leaf (and any fresh herb sprigs, if used). Use an immersion blender to blend the soup directly in the pot until completely smooth and velvety. (Alternatively, carefully transfer the soup in batches to a stand blender and blend, then return to the pot).
Season and finish
Stir in the lemon juice, then season with salt and generous amounts of black pepper to taste. If the soup is too thick, stir in a little extra vegetable broth or water to reach your desired consistency.
Garnish and serve
Ladle the warm soup into bowls. Garnish with a drizzle of olive oil or chili oil, fresh chopped parsley, and plenty of cracked black pepper. Serve hot with warm, crusty bread.
Enjoy!

💡 Tips for the Best Soup
For extra richness, you can blend in 1/4 cup of raw cashews (soaked in boiling water for 15 minutes) or a splash of unsweetened coconut milk.
Don't skip the lemon juice at the end! It cuts through the rich, earthy flavors and makes the soup pop.
Serve with croutons or a sprinkle of vegan parmesan for some added texture.
