Stir-Fried Minced Pork with Fresh Chilies 🌶️🍂

Fall weather is finally here in Texas, which means it’s the perfect time to take the cooking outside. 😊 Cooler weather, fresh air, and no lingering Thai cooking smells in the house! 😆

Today’s beautiful red, yellow, and green chilies 🌶️ came fresh from “สวนผักไทย ในอเมริกา” (Thai Vegetable Garden in America). They were so fresh and colorful that I just had to cook with them! A simple Thai-style stir-fry with minced pork, fresh chilies, and green onions — savory, a little spicy, and perfect with hot steamed rice. ❤️

🌶️ Thai Tom Yum Poh Taek — spicy, sour & loaded with seafood! 🦐🦪🌿🇹🇭

Shrimp, mussels, lots of mushrooms, fresh Thai herbs, and holy basil in a hot & tangy clear broth.
I like to keep the pounded roasted chilies on the side — add a little or a lot, so everyone can enjoy it at their own spice level. 🔥😊

I’ve been away for a little while—school break with the kids left me with almost no time to cook and share! 😅 But Nanny’s Kitchen is finally back with something truly worth saving. 🌶️

This make-ahead Som Tum sauce is easy to make at home and works beautifully for both Som Tum Thai and Som Tum Lao. Simply add fish sauce, pla ra, fresh lime, peanuts, or anything you love. Spicy, tangy, savory, beautifully colored—and so delicious! ❤️

🥬🥓 Stir-Fried Water Spinach with Crispy Pork

One of my favorite kitchen hacks is making extra crispy pork and storing it in the freezer. ✨

Whenever I need a quick meal, I simply reheat it in the air fryer for a few minutes, and it comes out crispy and delicious all over again — almost like freshly made.

This time, I turned it into stir-fried water spinach with crispy pork, with extra sauce just the way we like it at home. ❤️ Served with hot steamed rice, it’s one of those simple meals that always brings comfort.

If you’d like to see how I make and freeze my crispy pork, the full recipe is in my previous post. 😊

Homemade Crispy Pork Belly 🐷✨

Crispy on the outside, juicy on the inside, and surprisingly easy to make at home.

Nanny loves making a big batch and freezing the extras. Whenever we’re craving crispy pork belly, we simply reheat it straight from the freezer in the Air Fryer at 375°F (190°C) for 5–7 minutes, and it comes out crispy all over again.

Perfect with sweet dark soy sauce, steamed rice, or your favorite stir-fry dishes.
