Spaghetti squash boats!
Elote style!
Used up some leftover taco meat!
Roasted 1 large Spaghetti squash split in half till tender on 375. Pulled all the insides into shreds with butter and elote seasoning from trader Joe's.
Then in a skillet I
Sautéed a red onion with a bag of frozen corn. Seasoned with more everything elote and slap ya mama, pepper, garlic powder, red pepper. Added the taco meat, cotija cheese, cilantro mayo and sour cream! Mixed all together inside the boats. Topped with shredded cheese and baked on 425 till browned and bubbley. 🥴

I roasted 1 XL Butternut & 2 Honey nut squash along with,
1 Onion diced
6 Garlic cloves
2 med Carrots diced
1/2 Red pepper diced
1 can Tomato paste
2 ribs diced Celery with leaves.
Then I seasoned with..
Salt
Pepper
Rosemary
Thyme
Ginger
Sage
Basil...
Few cups veggie broth. Just kept adding a cup till I liked the consistency.
Blended until smooth. Cooked till hot and bubbley.
Topped with the roasted seeds and fresh heavy cream.

Using up some things today from the garden. Made a bunch of squash soup to freeze for meal prep. Made elote taco spaghetti squash boats that were damn good! And Made a crap ton of potato corn chowder with our potatoes that needed using up! Soup went good with a club sandwich! Going to start pressure canning pumpkin asap! What are you making this October!!
