🛒 Ingredients
For the Crispy Potatoes
• 1½ lbs (680 g) baby potatoes, washed and dried
• 2 tablespoons olive oil or avocado oil
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• ½ teaspoon smoked paprika
• Salt and black pepper, to taste
• Fresh chopped parsley, for garnish
For the Creamy Spicy Dip
• ½ cup mayonnaise
• ¼ cup sour cream or Greek yogurt
• 1–2 tablespoons hot sauce or sriracha
• 1 teaspoon lemon juice
• 1 small garlic clove, finely minced
• A pinch of salt
👩🍳 How to Make It
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper if desired.
2. Pat the baby potatoes completely dry. Leave small potatoes whole and halve any larger ones for even cooking.
3. Toss the potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly coated.
4. Arrange in a single layer on the baking sheet, leaving space between the potatoes. Roast for 30–40 minutes, turning or shaking the pan halfway through, until golden, crispy, and fork-tender.
5. Meanwhile, whisk together the mayonnaise, sour cream, hot sauce, lemon juice, minced garlic, and salt until smooth and creamy.
6. Sprinkle the roasted potatoes with fresh parsley and serve hot with the spicy dipping sauce.
✨ Tips
• For extra crispiness: Dry the potatoes thoroughly before seasoning and avoid overcrowding the baking sheet.
• Adjust the heat: Start with 1 tablespoon of hot sauce and add more to taste.
• Make the dip ahead: Refrigerate it until serving to let the flavors develop.
• Store leftovers: Refrigerate the potatoes for up to 3 days and reheat in an air fryer at 375°F until hot and crisp.
