INGREDIENTS
• 8 oz grouper fillet, thawed
• 1/2 tsp kosher salt
• 1/4 tsp black pepper
• 1/2 tsp paprika
• 1 tbsp olive oil
• 2 tbsp butter
• 2 garlic cloves, thinly sliced
• 1 tbsp fresh lemon juice
• 1 tbsp fresh parsley, chopped
INSTRUCTIONS
1. Dry and season. Pat the fillet very dry with paper towels. Season both sides with the salt, pepper, and paprika.
2. Heat the skillet. Heat your cast-iron skillet over medium-high for about 3 minutes, then add the olive oil. It should shimmer.
3. Sear side one. Lay the fillet in the pan, presentation side down. Press gently for a few seconds, then leave it alone for about 4 minutes so a golden crust forms.
4. Flip and baste. Flip carefully, drop the heat to medium, and add the butter and garlic. Tilt the pan and spoon the foaming butter over the fish for about 2 to 3 minutes.
5. Finish. Pull the pan off the heat. Squeeze in the lemon juice, sprinkle with parsley, and spoon the pan sauce over the fillet. The fish is done when it flakes easily and reaches 145°F inside.
