🌮🍲 THE CAN DO COTTAGE CREAMY TACO SOUP!
WELP. Y'all, we have ourselves a winner! 🤣
The Cottage Crew has spoken, and apparently this little pot of deliciousness is worth sharing!
Now, before anybody asks for exact measurements... bless your hearts. We cook with our souls around here. Measuring spoons are merely suggestions. 😂
And in honor of the legendary Cajun cook Justin Wilson, whose recipes my Paw Paw Jim used quite a bit, we're throwing a little extra Southern kitchen charm into this one!
WHAT YOU'LL NEED:
🥩 2 lbs ground beef (we used 80/20)
🌮 A few GOOD dashes of taco seasoning. How much? Until your ancestors whisper, "That's enough, honey."
🌽 2 ears of Creasy Aviation sweet corn. Accept no substitutes. Farmer Nick has us SPOILED!
🍅 1 can fire-roasted diced tomatoes, juice and all!
🌶️ 1 jar of our homemade Salsa Citizen PLUS the remnants of a few other jars. We're equal-opportunity salsa users around here. (We can ours in pint jars)
💧 3 pints water, courtesy of rinsing out those salsa jars. We ain't leaving perfectly good flavor behind!
🧅 1 yellow onion, diced
🧄 Approximately 4–6 fresh garlic cloves, minced. We all know garlic can't be trusted unsupervised around here.
🐔 A good sprinkle of chicken bouillon powder
🌿 Dehydrated cilantro, however much makes your heart happy
🧀 8 oz cream cheese, SOFTENED. Remember that word. It's important. Ask me how I know. 🙄🤣
LET'S GET TO COOKIN'!
1. Toss that diced onion into a big ol' pot with a little olive oil and sauté until softened. Add your ground beef and brown it up. Throw in the minced garlic toward the end, give it a good stir, then drain the excess grease.
2. Add your taco seasoning, Salsa Citizen, salsa-jar rinse water, fire-roasted tomatoes, chicken bouillon, and cilantro. Give everything a good stir and bring that beautiful mess to a boil.
3. Reduce to a simmer while you cut that gorgeous Creasy Aviation sweet corn right off the cob.
4. Dump Farmer Nick's corn into the pot and let everything simmer for about 12 minutes.
5. NOW comes the creamy goodness! Add your 8 oz of SOFTENED cream cheese. Stir gently until it's completely melted and your soup is creamy and glorious.
And listen here, y'all... when the recipe says softened cream cheese, it MEANS softened cream cheese. Don't get impatient like yours truly and expect a cold brick of cheese to cooperate. It will humble you. 🤣
6. Ladle it up and get to eatin'!
TOP IT OFF WITH:
🧀 Shredded cheese
🥄 Sour cream
🌿 A little dried cilantro
And if you're feeling extra rebellious, throw some crushed tortilla chips on top!
Now, our Salsa Citizen is homemade and canned right here at The Can Do Cottage. We'll share that recipe another day! But if you're a fellow canner, use your own homemade salsa. Store-bought works, too. We won't tell anybody. 🤫
And in the spirit of Justin Wilson...
I GAR-ON-TEE, THIS ONE'S GOOD! 🤣
