Spring in Perth brings sunshine, beautiful blooms and the perfect excuse to enjoy a classic Aussie pavlova!

Crisp on the outside, soft and marshmallowy in the middle, and topped with fresh strawberries, tangy passionfruit and a sprinkle of garden-fresh mint. What's not to love?

The best part? Strawberries, passionfruit and mint can all be grown at home, making this delicious dessert a wonderful way to celebrate the journey from garden to plate.

🍓 Spring Garden Pavlova with Strawberries & Passionfruit

Serves 6–8

Prep: 25 mins | Cook: 1 hr 15 mins

Ingredients

For the pavlova:

4 egg whites, at room temperature

1 cup caster sugar

1 teaspoon white vinegar

1 teaspoon cornflour

1 teaspoon vanilla extract

For the topping:

300 ml thickened cream

250 g fresh strawberries, halved

3 fresh passionfruit

Fresh mint leaves to garnish

Method

Preheat the oven to 150°C (130°C fan-forced). Line a baking tray with baking paper.

Beat the egg whites until soft peaks form. Gradually add the caster sugar, beating until the mixture is thick, glossy and the sugar has dissolved.

Gently fold in the vinegar, cornflour and vanilla extract.

Spoon the mixture onto the prepared tray, shaping it into a circle with a slight hollow in the centre.

Reduce the oven temperature to 120°C (100°C fan-forced) and bake for approximately 1 hour and 15 minutes. Turn off the oven and allow the pavlova to cool completely inside with the door closed.

Whip the cream until soft peaks form, then spread over the cooled pavlova.

Top with fresh strawberries, spoon over the passionfruit pulp and finish with a sprinkle of fresh mint leaves.
