BAKETIP: Sandwiching a sponge
When sandwiching a classic sponge cake with jam and cream, a few simple tricks will help you get a neat finish, with the cream sitting beautifully between the layers.
First, whisk your cream to firm-soft peaks — halfway between soft and firm. Too soft, and it will ooze out between the layers; too firm, and it can split and become grainy as you spread it.
Spread the bottom sponge with a thin layer of jam, then add spoonfuls of cream evenly over the surface. Gently spread the cream, working it as little as possible to keep it smooth.
Finally, be sure to leave a one-centimetre border around the edge. This gives the cream room to spread under the weight of the top sponge, without squeezing out and dribbling down the sides.
