Serves: 3-4 | Prep: 10 min | Cook: 15 min
Ingredients
Beef Marinade
• Beef: 300g, thinly sliced
• Chilli powder: 1/4 tsp
• Chilli flakes: 1/4 tsp
• Cornflour: 2 tsp
• Salt: 1/2 tsp, to taste
• Black pepper: 1/4 tsp
• Ajinomoto/MSG: 1/8 tsp, optional
• Hot sauce: 1 tsp
• Baking soda: 1 pinch
Stir-Fry
• Hokkien noodles: 400-450g, fresh
• Oil: 2-3 tbsp
• Garlic paste: 1 tsp
• Ginger paste: 1 tsp
• Onion: 1 small, sliced
• Capsicum: 1/2 cup, julienned
• Carrot: 1/2 cup, julienned
• Cabbage: 1/2 cup, shredded
• Light soy sauce: 2 tsp
• Dark soy sauce: 1 tsp
• Oyster sauce: 1 tsp
• Salt: 1/4 tsp, or to taste
Method
1. Marinate the beef: Mix beef with all marinade ingredients — chilli powder, chilli flakes, cornflour, salt, black pepper, ajinomoto, hot sauce, and baking soda. Set aside for 10 min.
2. Prep noodles: Loosen hokkien noodles by dunking in boiling water for 30 sec. Drain and set aside.
3. Sear beef: Heat oil in a wok on high. Add ginger + garlic paste, fry till golden and fragrant.
4. Cook beef: Add marinated beef. Stir-fry 2-3 min till it just changes color.
5. Add veg: Toss in onion, capsicum, carrot, and cabbage. Stir-fry 2 min — you want them crisp, not soggy.
6. Sauce it up: Add light soy sauce, dark soy sauce, oyster sauce, and 1/4 tsp salt. Mix well for 1 min.
7. Noodles in: Add the loosened hokkien noodles. Toss everything together on high heat for 2-3 min till noodles are coated and heated through.
8. Steam finish: Put the lid on, turn heat to low, and let it sit for 2 more min. This helps the noodles soak up flavor.
9. Serve hot: Garnish with spring onion or chilli oil if you like.
