Here's the evolution of seasoning a Strata Carbon-Clad Frying Pan. Interestingly, a Strata pan looks like a stainless steel pan when it's new, but over time, the inside darkens to a rich dark golden colour. That's the sign of a beautifully seasoned carbon steel pan

Strata Carbon Clad is the world's first aluminum-based carbon steel pan. Iron results with aluminum performance. Cook Culture is the exclusive Canadian dealer.

Have you heard of the new cookware, Strata? When we say 'new cookware', we mean this is a new-to-the-market type of cookware. Aluminum core clad cookware is not new but this invention combines a stainless steel exterior, aluminum core, and CARBON STEEL for the cooking surface., which has never been done before.

What's so special about this pan, you ask. Aluminum-clad cookware has been the top choice for cooking enthusiasts and professional cooks for decades. Still, in all that time, no one combined the searing and nonstick features of iron with the speed and lightness of aluminum, until now.

If you LOVE iron cookware, but weight is an issue, this is the best and only choice for you.

Strata is a brand new company, with a brand new pan. Cook Culture is the first (for now) retailer to carry this brand in Canada.

Question from YouTube: 'Why would you use metal to clean your cookware?'

Using non-abrasive metal loops (chain mail) to work off tough built on food is ideal. It will scour the food while not damaging the surface, and for iron cookware, if used properly, it won't hurt your seasoning. Literally, the best cleaning tool ever!

A question on YouTube: 'What's that cream that you use for making your pans non-stick?"

It's a local beeswax and Canadian seed oil blend, which is more like a paste than a cream. It's used on raw iron cookware to protect the pan from oxidation (rusting). While a quality seasoning will create a finished surface which helps to make a pan non-stick, the paste itself will not do the job, but is the first step.

Creating a seasoning, by any method. is just part of the process for non-stick results. You can learn all about seasoning on our YouTube channel https://www.youtube.com/-Culture
