I’ve been volunteering with to teach cooking in schools for just over two years now as often as I can and every single time I do one of these classes I am filled with joy and hope 🫶🏻.

Hope for a kinder future for the animals, hope that it is possible to get kids excited about cooking with plants and in ways that are better for their own physical and mental health.

Joy because being around them is just purely that. The questions they ask, the curiosity they have, the open-mindedness they approach things with. They’re so willing to try things out. And finally it’s just plain fun - we laugh a lot.

I think all children deserve a better food system - one that offers them good nutrition and cheap, easy ways to do it themselves at home too, and for me that begins with schools, and showing them that plants can be rich, indulgent and delicious- you just have to show them what to do with them.

Was great fun teaming up with the super talented and engaging for this one too 🙌🏻

Friday 16 October is film ( ) & sandwiches night at and

I just thought it’d be a nice way to maybe hang out with some like-minded people and watch something educational, and then talk about it over some banging sandwiches.

18.00 showing at the Ritzy - tickets are ÂŁ16

Oh and the flatbread recipe couldn’t be easier - I’ve been trying and testing to get the perfect fluffy flatbread but with easy measurements to remember. So just mix the same quantities of self-raising flour & silken tofu with half the quantity of soy milk. So I did 50g of flour and tofu then 25g milk. Add a sprinkle of bicarb and baking powder and salt, leave to rest for 10 mins then roll out and fry in a hot dry pan. I basted it with sumac and za’tar oil after and topped with shawarma mushrooms and pickled things (and a smoked tofu and butterbean base).

Easiest chocolate mousse recipe that you never have to remember quantities for:

Equal quantities silken tofu, dark chocolate and soy milk. Melt together in a saucepan (you won’t need a Bain Marie), blend and cool. Freezer it’ll be ready in about 30 mins, fridge around 1.5 hrs.

Plant-based cooking 101: adventures in gram flour #1

Gram flour is an absolute powerhouse of nutrition and if we can mimic the mouthfeel and enjoyment from an omelette or frittata without resorting to funding baby male chicks being ground up alive then why wouldn’t we.

🌱100g soy milk
🌱50g gram flour

Blend or whisk then fry it up like a regular omelette.

Obviously this is the most basic version and it’s not going to taste like an omelette, though the texture is a decent mimic. Add kala namak (black salt) for egg flavour and nutritional yeast for an easy cheesy taste (&B12 hit).

To garnish: I used chilli crisp, some salad leaves dressed in lemon and more nutritional yeast and a sprinkling of some kimchi furikake I had in my cupboard.

Smoked tofu, Sichuan and nectarine salad with at least 30g protein thanks to the tofu and nutritional yeast 💪🏻🌱

Comes together in hardly any time 🙌🏻🙌🏻

🌱1 pack of smoked tofu roughly torn into big and small pieces
🌱Two handfuls of spinach
🌱Sichuan pepper (ground)
🌱1 tsp garlic powder
🌱Nutritional yeast
🌱Olive oil
🌱2 tsps potato starch
🌱Pinch of bicarbonate of soda
🌱Half a nectarine sliced thinly
🌱A handful of mint leaves

👩🏻‍🍳Sprinkle 1 tbsp nutritional yeast, 1 tsp Sichuan, the potato starch and garlic powder over the tofu
👩🏻‍🍳Fry in hot olive oil until crispy then put aside
👩🏻‍🍳Dress the spinach & mint really simply with more nutritional yeast, salt, olive oil, lemon juice, Sichuan to taste. I also added chilli flakes
👩🏻‍🍳Mix in half the nectarine slices, reserving the other half to garnish on top

Protein/fibre builds: sprinkle toasted sunflower or pumpkin seeds into the salad for more nutritional benefits and texture contrast
