Dinner becomes so much more fun when you know what to you’re making. Cooking dinner is now one of my fave parts of the day!

This week I ate:

Honey garlic chicken with egg fried rice: Delicious Chinese-takeaway style rice with sweet & sticky chicken, the perfect weeknight meal. This one is full of protein to help keep you full and works so well for lunch the next day.

Spicy lamb buns: I love bao, and I even made these ones from scratch (recipe coming this week). These were so incredible to eat, and lamb is a great source of iron and protein.

Chicken enchiladas: Making enchiladas is totally worth it. You can bulk them up with beans and veggies to lower the cost, and they are surprisingly simple to make.

Beef & bacon burgers: I always love making burgers on a Thursday for some reason. Burgers are great because you can make them balanced by serving with veg such as tomato, lettuce, avocado and beetroot, without feeling like you’re eating a full-veg meal.

Pork schnitzel with potato & pea salad: One of Dinner Date’s classic meals - potato salad with a crispy protein. Topping crispy pork with a creamy & delicious potato salad makes it look extra fancy with no effort.

If you want to grab these recipes, comment RECIPE and I will send the link to join my Dinner Date hub. It’s only $5 per week and you will never worry about what to cook for dinner again.

It’s getting warmer every day but I am still enjoying a yummy warming dinner! Try this sausage & bean braise next time you want a simple meal that’s full of fibre & protein.

Ingredients:
4 pork sausages
1 onion
3 tsp crushed garlic
400g tin white beans
400g tin crushed tomatoes
½ cup chicken stock
1 tsp mixed herbs
1 tsp smoked paprika
½ tsp salt
½ tsp pepper
1 tbs olive oil
Crusty bread
Butter to serve

Directions:
Sausages: Heat a large pan to medium-high heat and add 1 tbs olive oil. Cook 4 sausages for 3-4 minutes, turning occasionally until browned all over. Remove and slice into thirds.

Braise: In the same pan, dice 1 onion and add to the pan over medium heat. Cook for 3-4 minutes until softened. Add 3 tsp crushed garlic, 1 tsp mixed herbs and 1 tsp smoked paprika and cook for 1 minute. Add 1 x 400g tin crushed tomatoes, ½ cup chicken stock and 1 x 400g tin white beans. Add the sausages back in and stir everything together. Reduce the heat to low and let simmer for 20 minutes until the sauce has thickened.

Serve: Season with ½ tsp salt and ½ tsp pepper. Serve with crusty bread and lots of butter.

This week I decided to cook:

Loaded steak sandwiches: We cooked the steak on the BBQ which was so awesome! I love loading a sandwich with plenty of vegetables to give a boost of fibre and micronutrients. This recipe was so good, and will definitely be on rotation over the next few months.

Satay beef roti wraps: I love reaching for roti/paratha instead of rice sometimes. They have an incredible crispy and crunchy texture that pairs so well with the saucy meat. Beef is a great source of haem iron, which I needed after a big week of training.

Kaarage chicken rice bowl: This was incredible, and tasted just like a Japanese restaurant. Using a mixture of starches to create the crispy texture worked so well and I will definitely be using this again. I served this with edamame and avocado for a great source of fibre, omega-3 fatty acids and calcium.

Crumbed fish burgers: I try to add some fish into my diet for variety and to keep things interesting. The great thing about this recipe is that it works so well with chicken, too. I really enjoy having burgers mid-week because it keeps things fun but they aren’t too difficult to cook.

Chicken gyro bowls: This was my favourite recipe of the week, for sure! My Dinner Date subscribers will know that I love a bowl because it’s the best way to add a bunch of ingredients (aka, using up stuff in the fridge!) and is perfect for lunch the next day.

Unpopular opinions: dietitian edition.

- ‘Healthy food’ doesn’t exist in my books. Foods can be nutritious, but ultimately everyone has a different idea of what ‘healthy’ looks like
- I think life is too short to spend it avoiding foods you love. Eat the dessert, get dinner with your friends, say yes to things you truly enjoy - one day you won’t get the chance anymore
- No one’s dying from protein deficiency, but colon cancer is on the rise. Fibre should be our focus, not protein
- Calorie counting is incredibly challenging & restricting. If you have a fragile relationship with food, it’s probably not a good idea.
- Low calorie swaps have a time and a place, but sometimes I want my brownie with real butter & chocolate, not chickpeas
- Instead of chasing weight loss, I believe in focusing on improving your lifestyle choices and doing what works for your situation. Movement & nutrient-rich foods should be the aim
- Health isn’t just about what you eat. There’s so many pillars of health - social, spiritual, mental and physical. You can eat the cleanest whole foods diet but can still be disconnected to the other pillars.
