Escaped to the mountains for a few days and it was glorious! Our sweet friends let us stay at their beautiful cabin with the most amazing views. No plans, no agenda—just rest, coffees, walks in nature, and long talks. So thankful to the Lord for this time together!

La Parmigiana di Melanzane is one of those dishes that reminds me of our life in Italia. Sunday suppers are the perfect Italian way to bring the family together for a home cooked meal and conversation lingering for hours at the table. I hate wasting food! I had some garlic that was turning green so decided to roast it. Don’t worry if it’s a bit green it won’t hurt you! This is super easy to make. Simply squeeze out the cooked garlic into a bowl and mash with a fork for a simple roasted garlic spread for bread or on top of a steak. Buon appetito!

Ten years ago today we were walking our Roman neighborhood to drop off our boys at preschool. First day of scuola for our youngest at the time. They were so little and soaked up all things Roman. I can hear their little feet on the pavement and their tiny voices saying, “Mammina, andiamo a scuola!” I miss their little Roman accents. It’s photos like this that remind us that life is truly fleeting. It’s soooo short. There is so much in this world to be distracted with! So much to be worried about. So much to keep us from our callings or maybe even miss them entirely. Can we say no to that?! I invite you to shut off the noise, lay aside the weight, and lean into the season you are in TODAY, because before you blink, it will be tomorrow. If we can be present, be sincere, be intentional…we will embrace this beautiful gift called life.

I made classic Italian Meatballs over the weekend. I did something a bit different this time and the adapted recipe which was a huge success with the famiglia so I decided to share it with you. The ground turkey balances the richness of the beef giving these meatballs the perfect balance of richness. Enjoy e buon appetito!

RECIPE: Italian Meatballs 🇮🇹

Ingredients:
1 pound ground beef
1 pound ground turkey
1 cup bread crumbs
1 1/2 cups milk
3 eggs
1 cup Parmigiano Reggiano cheese
1 cup Pecorino Romano cheese
1 tbsp salt
1/2 tsp ground pepper
1 minced garlic clove

For Shaping:
1 cup all purpose flour

The sauce:
1/2-1 jar of tomato passata
Fresh basil leaves
Salt and pepper

Instructions:
1. Combine all of the ingredients in a large bowl and mix together thoroughly.
2. Scoop out spoonful-sized pieces of meat and roll in between your hands forming a small ball. Don’t over work the pieces.
3. Place the flour on a plate or in a bowl. Take each ball and roll into the flour allowing a nice dusting on each ball and place on a parchment lined sheet pan and continue shaping each ball.
4. Once all of the balls are placed on the sheets ( it will make enough for two pans), place into a preheated oven at 375F and cook until they are browned and have an internal temperature of 155F.
5. Meanwhile place the sauce ingredients in a large skillet and bring to a simmer.
6. Add the cooked meatballs to the sauce and braise slightly. Serve over spaghetti pasta. 🍝

I’ve spent le vacanze estive at the place where after only 10 minutes, I feel instantly relaxed. The quiet rhythm of the waves, the sound of the wind, the azzurri azzurri colors that seems to sparkle on the horizon. I’ve always loved the ocean. I love to just be there are do nothing. No to-do list. No tech. Just space to gaze, ponder, and reflect. I’ve enjoyed painting watercolor works, reading good books, taking long walks with my boys looking for seashells, and watching them build sand castles with massive creative proportions. I’ve shared meaningful conversations with my husband with no distractions. I think it’s important that we remember life is not a hustle. It’s not a sprint. It’s a gift to be treasured and spent wisely. It’s good to reset and refresh. How much does our world need it?! If you’re feeling a bit anxious in your soul today, I invite you to stop and look at the nature around you. Unplug. Reset. Welcome true rest in.
