It’s Taco Tuesday and this is the ultimate Birria taco shortcut!
Omaha Steaks pot roast is fully cooked, so all you need to do is blend up some ingredients, add it to an instant pot for 40 minutes, shred and enjoy!
The pot roast is so versatile that we always have one on hand to use as a shortcut for busy weeknights, but this Birria recipe is always our favorite!
Ingredients:
- 1 Omaha Steaks pre-cooked pot roast
- 2 large dried guajillo peppers, stems removed
- 2 medium dried chile de arbol, stems removed
- 2 tbsp canola oil
- 1 cup diced white onion
- 1 cup canned fire roasted tomatoes
- 2 cups chicken broth
- 5 garlic cloves
- Juice of 1 lime
- 1 ½ tsp ground cumin
- ¼ tsp ground cinnamon
- 1 whole clove
- 1 bay leaf
- 1 tsp dried oregano
- 1 tsp salt
Directions:
1. Drop chiles into boiling water and simmer 10 to 12 minutes, or until fairly soft.
2. Turn on Instant pot to sauté setting. Add oil and sautee the onion. Once soft add the cumin, salt, cinnamon, clove, oregano and bay leaf.
3. Remove chiles from hot water and place in a blender along with tomatoes, chicken stock, lime juice, and garlic. Pulse until mostly smooth.
4. Add the Omaha Steaks pot roast and all juices plus the tomato mixture to the instant pot and close to seal. Set on “Manual” and set time to 40 minutes. At end of cook time, allow instant pot to release steam.
5. Remove meat and shred. Set aside.
6. Fill taco shells with birria meat and cheese plus toppings of your choice such as pickled red onions, avocado, and fresh cilantro.
