Game day just got a whole lot smokier. 🔥🧀
We loaded up a cast iron skillet with ground beef, Mexican chorizo, Velveeta, pepper jack, Rotel and fresh jalapeños, then let the El Fuego Trio work its magic over charcoal and indirect heat. Rich, cheesy, smoky, and gone in about five minutes flat.

🧀 LOADED TEXAS SMOKED CHORIZO QUESO
🌡️ 250–275°F indirect | ⏱️ 45–60 min | 🍽️ Serves 8–10
🛒 INGREDIENTS
• ½ lb ground beef (80/20)
• ½ lb fresh Mexican chorizo (raw, not cured)
• 12 oz Velveeta, cubed
• 8 oz shredded pepper jack
• 1 can (10 oz) Rotel with green chiles, undrained
• 2 jalapeños (1 diced, 1 sliced for garnish)
• Up to ¼ cup whole milk (only if needed)
• Fresh cilantro, chopped
• Tortilla chips for serving
👨🍳 HOW TO MAKE IT
1⃣ Fire up the El Fuego Trio with charcoal.
2⃣ Brown the beef and chorizo in a 12" cast iron skillet over direct heat until 160°F. Drain the grease.
3⃣ Move to indirect heat. Add the Velveeta, pepper jack, Rotel and diced jalapeño.
4⃣ Stir as it melts, adding milk a little at a time if you want it looser.
5⃣ Smoke at 250–275°F for 30–45 min, stirring every 10–15 min, until smooth and bubbling.
6⃣ Top with cilantro and jalapeño slices.
7⃣ Serve straight from the skillet with chips.
🔥 Pro tip: Keep it on gentle indirect heat and stir often so nothing scorches. Go easy on the milk so it stays thick enough to load up a chip.
