Crispy Cheesy Hash Browns
What do you make on a slow Sunday morning when the eggs need a sidekick?

Ingredients
4 medium russet potatoes (about 2 lb)
1 cup shredded sharp cheddar
1 large egg
2 tbsp all-purpose flour
½ tsp garlic powder
1 tsp salt
¼ tsp black pepper
4 tbsp vegetable oil

Directions
1. Peel the potatoes and grate them on the large holes of a box grater.
2. Wrap the shreds in a clean kitchen towel and squeeze until no more liquid drips out.
3. Mix the potatoes with the cheddar, egg, flour, garlic powder, salt and pepper in a bowl.
4. Heat 2 tbsp oil in a large skillet over medium heat until it shimmers.
5. Drop in mounds of about ⅓ cup and press them flat to ½ inch. Fry 4–5 minutes per side until deep golden and crisp at the edges.

Crispy Honey Garlic Chicken
I made this twice last week, and the second time I doubled the sauce.

Ingredients
1½ lb boneless skinless chicken thighs
1 cup all-purpose flour
½ cup cornstarch
1 tsp garlic powder
1 tsp smoked paprika
1 tsp salt
½ tsp black pepper
2 eggs
Vegetable oil, for frying
For the sauce:
2 tbsp butter
6 cloves garlic, minced
½ cup honey
¼ cup soy sauce
2 tbsp water
1 tbsp rice vinegar
½ tsp red pepper flakes

Directions
1. Mix the flour, cornstarch, garlic powder, paprika, salt and pepper in a bowl. Beat the eggs in a second bowl.
2. Dredge each piece of chicken in the flour, dip it in the egg, then dredge it again. Press the coating on well.
3. Heat 1 inch of oil to 350°F. Fry the chicken for 5 to 6 minutes per side, until it is deep golden and reads 165°F inside, then drain it on a rack.
4. Melt the butter in a skillet over medium heat. Cook the garlic for 1 minute, until fragrant.
5. Add the honey, soy sauce, water, vinegar and pepper flakes. Simmer for 3 to 4 minutes, until the sauce thickens and coats a spoon.
6. Spoon the sauce over the chicken and serve it right away, while the crust is still crisp.

Cheeseburger Pasta Bake
Pull the shells out 2 minutes early, because they keep soaking up sauce in the oven.

Ingredients
12 oz medium pasta shells
1 lb ground beef
1 small onion, diced
2 garlic cloves, minced
1 can (15 oz) tomato sauce
½ cup milk
2 tbsp ketchup
1 tbsp yellow mustard
1 tsp Worcestershire sauce
½ tsp salt
¼ tsp black pepper
2 cups shredded cheddar, divided

Directions
1. Heat the oven to 375°F and grease a 9x13-inch baking dish.
2. Boil the shells in salted water 2 minutes less than the package says, so they stay firm after baking. Drain.
3. Brown the beef and onion in a large skillet over medium-high heat for 7–8 minutes, until no pink remains. Drain the fat and stir in the garlic for 30 seconds.
4. Add the tomato sauce, milk, ketchup, mustard, Worcestershire, salt and pepper. Simmer 3 minutes, then stir in 1 cup of the cheddar until melted.
5. Fold in the shells, spread everything in the dish and top with the remaining cheddar.
6. Bake 20 minutes, until the cheese is melted and the edges bubble.

Coconut Cake with Seven-Minute Frosting
My grandmother made this every Easter, and I still remember licking the frosting off the beaters.

Ingredients
For the cake:
2.5 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 cup buttermilk
1 teaspoon vanilla extract
1 teaspoon coconut extract
For the frosting:
3 large egg whites
1 1/2 cups granulated sugar
1/3 cup cold water
1/4 teaspoon cream of tartar
1 teaspoon vanilla extract
For the coating:
2 1/2 cups sweetened shredded coconut

Directions
1. Heat the oven to 350°F. Grease and flour two 9-inch round pans, then whisk the flour, baking soda, baking powder and salt in a bowl.
2. Beat the butter and sugar for 3–4 minutes until pale and fluffy. Beat in the eggs one at a time, then both extracts.
3. Add the flour mixture in three parts, alternating with the buttermilk, and mix just until smooth. Divide the batter between the pans.
4. Bake 28–32 minutes, until a toothpick in the center comes out clean. Cool 10 minutes in the pans, then completely on a rack.
5. Beat the egg whites, sugar, water and cream of tartar in a heatproof bowl over simmering water for about 7 minutes, until the frosting stands in stiff, glossy peaks. Take it off the heat and beat in the vanilla.
6. Spread frosting between the layers and over the sides, then swirl the rest on top in tall peaks.
7. Press the coconut onto the sides and sprinkle some over the top while the frosting is still soft.

Oven Baked BBQ Ribs
The trick is a low oven and tight foil for hours, sauce only at the very end.

Ingredients
2 racks pork baby back ribs (about 5 lb)
2 tbsp brown sugar
1 tbsp smoked paprika
2 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1 cup barbecue sauce

Directions
1. Heat the oven to 275°F. Pull the thin membrane off the back of each rack.
2. Mix the brown sugar, paprika, salt, pepper, garlic powder, onion powder and chili powder. Rub it all over the ribs.
3. Wrap each rack tightly in foil, so the steam stays in and the meat turns tender. Set them meat side up on a sheet pan.
4. Bake 2½–3 hours, until the meat pulls back from the bones and a fork slides in easily.
5. Unwrap, pour off the juices and brush the ribs with half the barbecue sauce. Turn the oven up to 425°F.
6. Bake uncovered 10–15 minutes, brushing on the rest of the sauce halfway, until it is sticky and dark at the edges. Rest 10 minutes, then slice.

Ingredients
1½ lb flank steak
3 tbsp olive oil, divided
2 tbsp lime juice
3 cloves garlic, minced
1 tsp chili powder
1 tsp ground cumin
1 tsp smoked paprika

2. Heat a cast-iron skillet over high heat until it smokes. Sear the steak 4 to 5 minutes per side for medium-rare.

5. Return the steak to the skillet, toss for 1 minute and serve with the warm tortillas.

1 lb boneless chicken breasts, cut into strips
1 lb large shrimp, peeled and deveined
6 oz smoked sausage, sliced

4. Melt the butter in the pan and cook the garlic for 30 seconds, until fragrant. Pour in the cream and broth, add the rest of the Cajun seasoning and simmer for 4–5 minutes, until slightly thickened.
5. Stir in the Parmesan and spinach until the cheese melts and the spinach wilts. Season with salt and pepper.
6. Add the pasta, chicken, shrimp and sausage and toss, loosening the sauce with pasta water if needed. Top with extra Parmesan and the parsley.
