Roasted Duck + Crispy Pork on Rice

Overview – Prachak is a Cantonese barbecue restaurant in Bangkok. They had a fairly small, elongated space.

Chinese BBQ – Pork and duck came served over rice with an umami fermented sauce (soy?). The duck was rich and tender and somewhat shredded. The pork belly was crispy-skinned, rich, and cut to small bites.

Summary – Inherently tasty because it’s Cantonese barbecue. Quality was solid, but not as good as I’ve had in China.

Hard Rock Café – Pattaya, Thailand
Overall: B

One Night In Bangkok Spicy Shrimp - Crispy shrimp, tossed in a creamy, spicy sauce, topped with green onions, served on a bed of creamy coleslaw.
Baby Back Ribs - Seasoned with our signature spice blend, then glazed with our house-made barbecue sauce and grilled to perfection, served with seasoned fries, coleslaw and smokehouse beans.

Overview – Hard Rock Café is an international chain of rock-themed restaurants. I visited their location in Pattaya, right on the beach strip. They had a fairly large indoor high-ceiling space as well as a fairly large patio.

Shrimp – Tender shrimp, crispy-gone-slightly-soggy breading. Tangy, lightly spicy mayo. Served over cabbage in a heavy dressing.

Ribs – Very tender meat. Sweet and savory sauce. French fries were conventional - fairly crispy, fairly fluffy, fairly well-seasoned. Rich and tender beans, slaw.

Summary – It was very strange to go to an American restaurant in Bangkok. Basically the same as it would be here, which is to say tasty but highly uninspiring.

Moo Ping

Overview – An unnamed street vendor in Bang Rak early on a Saturday morning.

Moo Ping – A Thai breakfast staple. Simple glazed pork on a stick. A slightly tougher cut (shoulder?) that remained comfortably tender. A little bit of fat that made itself known in flavor.

Summary – Simple, delicious, cheap. I would spend ten times more for an inferior product in the US.

Chinese Noodle Pork Soup

Overview – Nai Ek Roll Noodle is a street restaurant in Bangkok’s Yaowarat neighborhood. I’m not sure hat their typical hours or operating conditions are, but I visited as part of the night market. There was a line to get seated at one of the basic sidewalk tables.

Soup – Roll noodles came with Cantonese roast pork belly broth. The noodles were rice-based and very tender, formed of squares that had been rolled up. The pork belly was tender with lightly crispy skin (softened a little from soaking in broth) and had a great pork fat flavor. The broth tasted heavily of white pepper. I think that it normally came with entrails, and I’m not sure it typically came with the roast pork belly, but I had some translation issues while ordering.

Summary – One of the most memorable things I ate in Thailand – very unique and an amazing value at rough $2.

Pad Thai Fai Ta Lu – Bangkok, Thailand
Overall: B

Iberian Smoked BBQ Pork Jowl Pad Thai - Imagine succulent Black Iberian Pork Jowl, delicately infused with fresh cilantro and the pure essence of non-GMO soy sauce. Grilled to perfection over a symphony of Binchotan and hickory wood, then expertly sliced on a sacred Tamarind wood butcher block. This block, kissed by sesame oil, basks in the sun’s warmth and is seasoned to perfection with kosher salt. With each slice, a tantalizing aroma fills the air, beckoning you to indulge. Paired with our divine ‘tamarind jus infused with bird eye chili and dry roasted capcicum,’ it’s a culinary masterpiece that will leave you crazing for more

Overview – Pad Thai Fai Ta Lu is a chefy casual Bangkok restaurant specializing in pad thai. They had a two-level space with a kitchen and entryway on the ground floor and a dining room on the second.

Pad Thai - Vibrant flavors. Fatty and tender Iberian pork jowl was flavorful with a mild smokiness. Small cubes of egg, ornamental scallion. Sauce and lime cheek on the side. Tender noodles with a great dark fermentation flavor.

Summary – While the flavors and textures were good, this felt overly deconstructed to the point that it lost its identity – especially with the separated-out egg.

Khao Neaw Mamuang - Mango With Sticky Rice

Overview – Mae Varee is a mango sticky rice shop in Bangkok’s Thong Lor neighborhood. They have a small semi-open shop that only serves to-go.

Mango Sticky Rice – A whole mango sliced up to 2 cheeks and the pit, which had quite a bit of residual fruit on it. The mango itself was excellent - ripe and vibrant, sweet and lightly tangy. Sticky rice was pleasantly chewy. Mung bean contrasted with its crispiness. Coconut milk was sweet, savory and surprisingly salty in a way that added fantastic balance to the dish.

Summary – Delicious and the best version I’ve had of mango sticky rice.

Pork Satay

Overview – Moo Satay Hia Sa is a satay stand in Bangkok’s Yaowarat Night Market. They offered food to-go or at one of a few small sidewalk tables.

Satay - Thin pork skewers were grilled over charcoal. The were lightly sweet, moderately savory, and didn’t carry any significant charcoal flavor. Very nice with the coarse and lightly spicy peanut sauce. It came with a salad in a dressing that I would describe as “thick gooey water”. Fine, but was bland / not necessarily needed to balance the satay.

Summary – Simple and delicious.

Rung Rueang Pork Noodle – Bangkok, Thailand
Overall: B+

Noodle Bowl - Tom Yum with Soup, Medium (Sen-Lek) Noodles, Mixed Protein (Pork, Pork Entrails, Minced Pork, Fish, Fish Ball)

Overview – Rung Rueang Pork Noodle is a street-style open air noodle restaurant in Bangkok. They have a large space with a persistent line to order and an English menu available.

Rice Noodle Soup - My choice of tom yum broth - spicy and sour. Very tender and silky noodles, probably technically overcooked but I found it pleasant. Dense fish balls, balanced flavor, nice. Mixture of pork cuts, some meat some organ meat. Nice variety, though some of the organ meet was a bit much for me.

Overall - Simple, flavorful, true to itself. A stupid value for the 90 baht (~$2) it cost.

Viet-Cajun Crawfish with Potato and Corn - Our world famous Viet cajun garlic butter seasoned crawfish
Muc Chien Gion - Fried Calamari tossed in Chef Trong’s special seasoning blend

Overview – Crawfish & Noodles is a Viet-Cajun restaurant in Houston. They have a medium-large high-ceiling casual space.

Crawfish – Tender and meaty crawfish and super-tender corn and potato. In a bath of vibrant, rich, garlic-heavy seasoning. Good textures, kinda monotonous flavor, but it was a good one with depth.

Calamari – Crispy and somewhat tough. Nice with the acidic sauce.

Summary – The crawfish was awesome – well cooked, very flavorful, the exact experience I wanted from trying Viet-cajun crawfish. The calamari felt like more of a miss.

Pork congee, nutritious organs and a soft boiled egg
Crunchy Patongo
Crispy noodle

Overview – Jok Prince is a congee shop in Bangkok. They have a small, very simple space with a small open kitchen in the front.

Jok – The congee was watery with body, distinct smokiness. Sweet ground pork meatballs. Bits of entrails, organ flavor. The patongo was really nice, like a youtiao, adding crunch, chew, and oily richness, absorbing broth for extra deliciousness. Super crunchy “crispy noodle” bits also added nice textural contrast but didn’t absorb broth at all. A raw egg was incorporated in, which felt weird but worked. Garnish of scallion and ginger. I added some tableside chili vinegar for balance.

Summary – A simple and humble dish yet one of the most memorable things I ate in Thailand.
