There are a lot of options when it comes to glass - the thickness of the piece, obscure or clear, and the size itself just to name a few.
A beveled edge is common on mirrors and table tops. The size of the bevel can range from 1/2 inch on up. The size of your piece and the thickness of glass will also factor into what size bevel you can choose.
A flat polish is another common option for table tops - not pictured is the similar "pencil polish" which is more round.
And finally a seamed edge just takes the sharp edge off, and is usually a good choice if your piece is going into a frame of some sort.

When you are replacing windows, one option is to add low-E - so what is that??!
In short, low-E is a coating added to the glass during manufacturing that helps reflect UV and infrared light, protecting your furniture and flooring from damage by the sun. It does add a slight tint, which is something to keep in mind if only replacing one window. You can see an example in this graphic - the tint really is minimally noticeable!
Low-E also helps greatly improve energy efficiency, helping your home stay cooler in the summer and warmer in the winter.
