A few weeks ago, my husband had a tasty idea for dessert to make apple pie bread pudding, so we gave it a try with some friends 🍎🤎 Topped it with homemade custard cream and it turned out SO good. A cozy fall dessert that was definitely worth making!

It’s spooky season, and spooky season calls for spooky eats! 👻🍅 Here’s my marinated tomato salad with skull shaped mozzarella 🥗💀 Enjoy!

RECIPE

TOOLS
Silicone skull mold - https://amzn.to/4fboQrc

INGREDIENTS
1 1/2 pounds cherry tomatoes, halved
12 ounces mozzarella ciliegine

DRESSING
1/3 cup extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey
2 tablespoons red onion, finely diced
2 cloves garlic, minced
1 tablespoon fresh or dried parsley
1 tablespoon fresh or dried basil
Salt, to taste
Pepper, to taste

INSTRUCTIONS
Preheat oven to 350°F. Slice each mozzarella ciliegine in half. Place a piece of mozzarella in each skull cavity. Bake for 8 minutes to soften. Using a spoon, press the cheese into the mold. A lot of liquid will be released during the baking process, so be careful to not burn yourself!
Place molds into refrigerator for 10 minutes to cool.
Once the mozzarella has cooled, arrange tomatoes and mozzarella in a single layer on a shallow dish.
In a small jar, combine the dressing ingredients. Place the lid on the jar and shake vigorously to emulsify. Pour over tomatoes and mozzarella.
Marinate for 2-3 hours. If you plan to marinate for longer, place the salad in the refrigerator and bring to room temperature prior to serving.
Enjoy!

Stopped by RevolutionTapRoomAndGrillNH for dinner. They have a fun mix of American fare and eclectic dishes in a casual space with Revolutionary War-inspired decor.

Service has been a bit hit or miss on our past visits, but this time was a pleasant surprise! The staff were new (at least since our last visit) and did a great job - friendly, attentive, and actually checking in on us throughout the meal.

I went with the smoked salmon BLT 🥪 with applewood bacon, avocado, lettuce, and tomato on sourdough. A tasty twist on a classic BLT!

For dessert - s’mores donuts 🍩, topped with toasted marshmallow, chocolate fudge, graham cracker crumbs, and milk chocolate.

It’s officially soup season! 🍲 Here’s a cozy bowl of homemade alphabet soup. There’s just something about a warm bowl of soup when the weather starts getting cooler, and the alphabet noodles just make it a little more fun.

RECIPE

INGREDIENTS
1 tablespoon oil
1 clove garlic, minced
1/2 onion, diced
1 carrot, shredded
1 stalk celery, diced
1 tablespoon tomato paste
3/4 teaspoon mushroom seasoning
3/4 teaspoon Italian seasoning
1/8 teaspoon black pepper
7 ounce can diced tomato
3 cups chicken or vegetable broth
1/3 cup alphabet pasta
Parsley, to garnish

INSTRUCTIONS
In a medium pot, heat the oil. Add garlic and fry until fragrant, about 30 seconds.
Add onion, carrot, and celery. Cook until softened, about 8 minutes.
Add tomato paste, mushroom seasoning, Italian seasoning, and pepper. Stir until evenly combined, about 1 minute.
Add diced tomato and broth. Stir to combine and bring to a boil.
Add alphabet pasta. Reduce heat to a simmer and cook according to package directions, being sure to stir occasionally to prevent pasta from sticking.
Ladle into bowls and garnish with parsley.
Enjoy!

Can’t go to Poland without stopping for some pierogi! 🥟These were duck pierogi served with a rich demi-glace and smoky crème fraîche 🤤 The duck was flavorful, and the smoky crème fraîche really brought everything together. Not your traditional pierogi, but very tasty!
