Collard Green Soup with Cajun Ham

1 tablespoon olive oil
2 cups chopped, Cajun ham
1/2 bag frozen peppers and onions
3 cloves garlic minced
3 ribs celery, diced
1 (16 ounce) container chicken broth
1 (15.5 ounce) can chopped collard greens
1 (15.5-ounce) can pinto beans drained and rinsed
1 (14.5-ounce) can diced tomatoes
1 (14.5-ounce) can whole kernel corn drained and rinsed
1 tsp onion powder
1 tsp garlic powder
1/2 tsp cumin
1 Tbl chili powder
salt to taste
pepper to taste

1. Heat the oil in a large stock pot or dutch oven of medium-high heat. Add the onions, peppers, celery and ham and cook until the onion is translucent, about 5 minutes. Add the garlic and cook for about 1 minute.
2. Add the broth and collard greens, bring to a boil, then reduce to a simmer. Stir in the corn, beans and tomatoes. Add seasonings, salt and pepper to taste. Cover and cook for 20 to 25 minutes or until the collards are cooked to your desired tenderness. Serve with piping hot cornbread.
