Cast-Iron Honey Garlic & Herb Chicken Thighs

"Sticky, sweet, savory, and full of kick! 🍗🍯🧄 These Golden Cast-Iron Honey Garlic Chicken Thighs are seared to crispy-skin perfection and simmered in a bubbling sauce loaded with whole roasted garlic cloves, fresh rosemary, and dried red chilies. One-pan magic for your dinner table! 🤤✨"

Ingredients
For the Chicken:
4 to 6 bone-in, skin-on chicken thighs
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika or smoked paprika
1 tsp salt
½ tsp freshly ground black pepper
For the Sticky Honey Garlic Sauce:
⅓ cup honey
¼ cup low-sodium soy sauce or tamari
2 tbsp unsalted butter
6–8 cloves whole garlic, peeled
3 cloves garlic, finely minced
1 tbsp apple c***r vinegar or lemon juice
3–4 sprigs fresh rosemary and thyme
3–4 dried red chili peppers (optional, for a subtle heat kick)

Instructions
Prep & Season the Chicken:
Preheat your oven to 400°F (200°C).
Pat the chicken thighs completely dry with paper towels (this ensures extra crispiness).
In a small bowl, mix the garlic powder, paprika, salt, and black pepper.
Season both sides of the chicken thighs evenly with the spice mix.

Sear the Chicken Thighs:
Heat 1 tablespoon of olive oil in a heavy cast-iron skillet over medium-high heat.
Lay the chicken thighs skin-side down in the skillet. Sear undisturbed for 6 to 8 minutes until the skin becomes golden-brown and extra crispy.
Flip the chicken over and sear the bottom side for 2 to 3 minutes, then temporarily transfer them to a plate.

Make the Honey Garlic Glaze:
Lower skillet heat to medium and melt the butter.
Add the whole garlic cloves, minced garlic, dried red chili peppers, and fresh rosemary/thyme sprigs. Sauté for 1 to 2 minutes until fragrant and lightly golden.
Whisk in the honey, soy sauce, and apple c***r vinegar. Bring to a gentle simmer so the glaze thickens slightly.

Bake to Perfection:
Nestled the seared chicken thighs back into the cast-iron skillet skin-side up, making sure not to submerge the crisp skin completely in the sauce.
Spoon a little bit of the pan sauce over the edges of the thighs.
Transfer the cast-iron skillet to the oven and bake for 15 to 20 minutes until the chicken is cooked through (internal temperature reaches 165°F / 74°C).

Garnish & Serve:
Remove from the oven, spoon the sticky garlic-infused sauce over the chicken, and garnish with fresh rosemary sprigs.
Serve piping hot straight from the skillet alongside steamed rice or roasted vegetables!

Ingredients
For the Cornbread Batter:
1 cup yellow cornmeal
1 cup all-purpose flour
1 tbsp baking powder
½ tsp baking soda
1 tsp salt
½ cup (1 stick) unsalted butter, browned and slightly cooled
⅓ cup granulated sugar or honey
2 large eggs, room temperature
1 cup buttermilk
½ cup sweet corn kernels (optional, for added texture)
For the Hot Honey Butter Glaze & Garnish:
¼ cup unsalted butter, melted
⅓ cup honey
1 tsp hot sauce or pinch of red pepper flakes (to taste)
1 tbsp fresh rosemary or chives, finely minced
Flaky sea salt, for sprinkling

Instructions
Brown the Butter:
In a small saucepan over medium heat, melt cup of butter.
Cook for 3 to 5 minutes, swirling occasionally, until the butter foams, turns a rich golden-amber color, and smells nutty.
Pour into a bowl and let cool for 5 minutes.

Prep & Mix Dry Ingredients:
Preheat your oven to 400°F (200°C). Generously grease a 24-cup mini muffin pan with butter or cooking spray.
In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, baking soda, and salt.

Combine Wet Ingredients & Bake:
In a separate bowl, whisk together the browned butter, sugar (or honey), eggs, and buttermilk until smooth.
Pour the wet ingredients into the dry ingredients and fold gently with a spatula just until combined (do not overmix). Stir in corn kernels if using.
Divide the batter evenly into the greased mini muffin cups, filling each about ¾ full.
Bake for 12 to 15 minutes until the edges are deep golden-brown, crisp, and a toothpick inserted into the center comes out clean.

Glaze & Garnish:
While the muffins bake, whisk together the melted butter, honey, and hot sauce (or red pepper flakes) in a small bowl.
Brush the hot honey butter glaze generously over the warm cornbread muffins as soon as they come out of the oven.
Sprinkle top with finely minced fresh rosemary and flaky sea salt.

Serve:
Let cool in the pan for 5 minutes, then pop out onto a tray and serve warm with extra glaze on top!

Garlic Herb Crust Standing Prime Rib Roast

"The ultimate showstopping centerpiece! 🥩👑🔥 A slow-roasted Standing Prime Rib Roast with a caramelized garlic and herb bark, incredibly juicy inside, and roasted right on the bone. Perfect for special celebrations and holiday feasts! 🤤✨"

Ingredients
For the Prime Rib Roast:
1 3-to-4 bone Standing Prime Rib Roast (about 6 to 8 lbs, French-trimmed)
2 tbsp olive oil or Dijon mustard (for binding the rub)
butcher’s tw**e, for tying

For the Garlic Herb Crust Rub:
6 cloves garlic, finely minced
2 tbsp fresh rosemary, finely chopped
2 tbsp fresh thyme leaves, finely chopped
1 ½ tbsp coarse sea salt or kosher salt
1 tbsp coarsely cracked black pepper
1 tsp garlic powder
1 tsp onion powder
½ cup (1 stick) unsalted butter, softened

Instructions
Prep & Season:
Take the prime rib roast out of the refrigerator 2 hours before roasting to allow it to reach room temperature for even cooking.
Pat the entire roast completely dry with paper towels.
Secure the roast by tying butcher's tw**e between each bone segment to maintain its shape.

Make the Garlic Herb Paste:
In a bowl, mash the softened butter together with minced garlic, chopped rosemary, chopped thyme, coarse sea salt, black pepper, garlic powder, and onion powder until a thick, paste-like rub forms.

Coat the Roast:
Rub the entire surface of the prime rib generously with the garlic herb butter mixture, ensuring the fat cap and sides are evenly covered.

Slow-Roast to Perfection:
Preheat your oven to 500°F (260°C).
Place the roast bone-side down on a wire rack inside a roasting pan.
Roast at high heat for 15 to 20 minutes to sear and form a rich, deeply browned outer crust.
Reduce the oven temperature to 325°F (165°C) without opening the oven door.
Continue roasting for another 1 ½ to 2 hours (about 12–14 minutes per pound) until a meat thermometer inserted into the thickest part reads 120°F (49°C) for rare or 125°F–130°F (52°C–54°C) for medium-rare.

Rest, Slice & Serve:
Remove the roast from the oven and transfer to a cutting board. Cover loosely with foil and let it rest for 20 to 30 minutes (the internal temperature will rise another 5°F–10°F while resting).
Snip and remove the tw**e, slice into thick, juicy bone-in portions, and serve hot with au jus or horseradish cream!

Ingredients
For the Tomahawk Ribeye Steak:
1 large bone-in Tomahawk ribeye steak (approx. 2 to 2.5 lbs)
2 tbsp high-smoke point oil (such as avocado or canola oil)
1 ½ tbsp coarse sea salt or kosher salt
1 tbsp freshly cracked black pepper
1 tsp garlic powder
For the Herb Butter Baste:
4 tbsp unsalted butter
4 cloves garlic, smashed
3–4 sprigs fresh thyme or rosemary
2 tbsp fresh parsley, finely chopped (for garnish)

For Serving:
4 cups crispy French fries (homemade or baked/air-fried until extra crisp)
½ cup creamy garlic aioli or peppercorn dipping sauce
Flaky sea salt, to taste

Instructions
Prep & Season the Steak:
Take the Tomahawk ribeye out of the refrigerator 30 to 45 minutes before cooking so it reaches room temperature.
Pat the steak completely dry on all sides using paper towels.
Season generously on all sides and along the fat cap with coarse sea salt, cracked black pepper, and garlic powder.

Sear to Golden perfection:
Heat oil in a large heavy cast-iron skillet over high heat until smoking hot.
Carefully lay the Tomahawk steak into the pan (sear the fat cap edge first for 1–2 minutes to render the fat).
Sear the flat side for 4 to 5 minutes until a deep, deeply caramelized crust forms.

Baste with Garlic Butter:
Flip the steak to the other side and lower heat to medium.
Add the butter, smashed garlic, and fresh thyme sprigs into the skillet.
As the butter melts and foams, tilt the pan slightly and continuously scoop the hot herb butter over the steak for 3 to 4 minutes until cooked to desired doneness (approx. 130°F / 54°C for medium-rare).

Rest the Meat:
Transfer the steak to a wire rack or cutting board, spoon extra pan butter over the top, and let it rest for 8 to 10 minutes so the juices redistribute.

Plate & Serve:
Arrange the rested Tomahawk steak on a large platter alongside a generous pile of steaming-hot, crispy French fries.
Place a bowl of creamy garlic peppercorn aioli on the platter for dipping.
Garnish the steak and fries with fresh chopped parsley and a pinch of flaky sea salt before serving!

2 cloves garlic, finely minced
½ tsp crushed red pepper flakes (optional, for heat)

For Garnish:
2 tbsp fresh parsley, finely chopped
