Boston Cream Poke Cake 🍰

1 box yellow cake mix (15.25 oz) + eggs, oil and water listed on its box • 2 boxes instant vanilla pudding (3.4 oz each) • 4 cups cold milk • 1 cup semisweet chocolate chips • ½ cup heavy cream

Bake cake mix in a 9×13-inch pan following box directions. Cool; poke holes with a wooden spoon handle. Whisk pudding mix and milk for 2 minutes; pour over cake before it sets. Chill 2 hours. Heat cream until steaming; pour over chocolate, wait 3 minutes and stir smooth. Spread over cake; chill until set. Keep refrigerated.

Strawberry Poke Cake 🍓

1 box white cake mix (15.25 oz) + eggs, oil and water listed on its box • 1 box strawberry gelatin (3 oz) • 1 cup boiling water • ½ cup cold water • 8 oz whipped topping • fresh strawberries

Prepare cake mix in a 9×13-inch pan following box directions. Cool 20 minutes; poke holes throughout with a fork. Dissolve gelatin in boiling water; stir in cold water. Pour evenly over cake. Refrigerate at least 4 hours. Spread with thawed whipped topping and add strawberries. Keep refrigerated.

2½ cups flour • 2½ tsp baking powder • ½ tsp salt • ¾ cup softened butter • 1½ cups sugar • 4 eggs • 1 tsp vanilla • 1 cup canned coconut milk • 1 cup sweetened shredded coconut

Cream butter and sugar; beat in eggs and vanilla. Fold in dry ingredients alternately with coconut milk, then shredded coconut. Divide between two greased 9-inch round pans. Bake at 350°F for 28–35 minutes, until a toothpick comes out clean. Cool; frost with vanilla buttercream and extra coconut.
