Ingredients
- 2 cups quick-cooking oats
- 1/2 cup smooth peanut butter
- 1/2 cup thick caramel sauce, divided
- 1/4 cup unsalted butter

Raspberry-Topped Pistachio Shortbread

Raspberry jam winds through buttery shortbread rounds, with a pistachio edge adding a nutty crunch.

Ingredients
- 1 cup unsalted butter, softened
- 2/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup chopped pistachios
- 1/2 cup raspberry jam

Directions
1. Beat the butter and powdered sugar until smooth. Mix in the vanilla, then the flour and salt just until a dough forms.
2. Roll the dough between two sheets of parchment into a 10-by-12-inch rectangle. If too soft, chill briefly; if it cracks, let it soften slightly.
3. Spread the raspberry jam thinly over the dough, leaving a 1/2-inch border. Starting at a 12-inch edge, use the parchment to roll it into a tight 12-inch log. Press any cracks closed.
4. Spread the chopped pistachios on parchment and gently roll the outside of the log in them. Wrap and refrigerate for at least 2 hours, until firm.
5. Heat the oven to 350°F (175°C). Line two baking sheets with parchment. Cut the log into 1/2-inch rounds with a sharp knife and set 2 inches apart.
6. Bake for 14–18 minutes, until the edges are lightly golden. Cool on the sheets for 10 minutes, then transfer carefully to a rack.
