How much of Fall’s bounty do YOU partake in?
Acorns are one of the most overlooked foods in North America! Every fall, billions of acorns rain down in backyards, forests, and fields. In mast years, they will cover the ground uncollected.
Acorns are edible, but they have a bitter defense called tannins. The tannins have be leached before you can eat the acorns. You can hot leach it in simmering water for a few hours or cold leach it with water over several days. At the end of the processing, you will have acorn flour which you can substitute into many different baking recipes.
My favorite thing to make is acorn pancakes. They are very hearty and filling pancakes that are very tasty. The acorn flour has higher fat content that normal flour, so you will often stay full much longer.
