Have you ever stood underneath a Katsura tree (Cercidiphyllum japonicum) and noticed a really sweet sugary smell in the fall? That is due to the enzymatic breakdown of their internal sugars, producing a compound called Maltol. It’s the exact same organic compound that’s used in the food, industry of flavor, cotton candy, and sweet pastries. We have several peppered throughout the garden, come have a sniff! 
Today is also the last day of our fall plant sale.
