Caramelized roasted pumpkin meets bold Thai spices, fresh ginger, fire-roasted tomatoes, and a creamy peanut butter sauce in this spicy Thai peanut pumpkin curry that's guaranteed to warm you from the inside out. Grab your F.N. Sharp knives and follow along (full recipe linked in the comments) 🔪

*Note, we used a Kabocha squash (Japanese pumpkin) for the video and a Flat White Boer pumpkin for the original recipe – take your pick!

Recipe Ingredients:
🔪 4 cups peeled pumpkin, cut into ½-inch pieces
🔪 3 tablespoons olive oil, divided
🔪 1 teaspoon salt, divided
🔪 1 teaspoon freshly ground pepper, divided
🔪 1 large yellow or red onion, diced
🔪 2 medium carrots, diced
🔪 3 stalks celery, diced
🔪 1 tablespoon all-purpose flour
🔪 1 tablespoon curry powder
🔪 1 tablespoon freshly grated ginger
🔪 1 teaspoon ground cumin
🔪 ½ teaspoon turmeric
🔪 2 cups chicken broth
🔪 1 cup baby arugula
🔪 1 (14.5 oz.) can fire-roasted diced tomatoes
🔪 ¼ cup oat milk or coconut milk
🔪 2 tablespoons smooth peanut butter

Garnish:
