Ada, in service at Sims Corner Steakhouse & Oyster Bar — Charlottetown, PEI.

Atlantic Canada’s premier steakhouse plates on our new Ada collection. Here: crispy pork belly over a smooth purée with mango salsa, served on the Ada oval platter — the fluted rim framing the dish without ever competing with it.

Sims Corner has built its name on Island-raised beef aged in-house and oysters pulled from PEI waters, served in a heritage room downtown. A kitchen at that level is particular about what its food sits on — the plate is the last thing between the kitchen and the guest. Ada earns its place: fine-dining lines, built to hold up to a working steakhouse service.

A decorative rim always gets the same question in the kitchen: how does it hold up in the dish pit?

Fair question. Ada runs through a commercial dishwasher, stacks on the shelf, and goes in the microwave and oven.

It covers the whole menu, amuse to coffee: appetizer and entrée plates, soup and pasta bowls, platters for shared mains, and cups and saucers to close the meal. It’s one pattern on every table, and one pattern to keep stocked. The scalloped edge shines in a hotel dining room or at a banquet set for 300 covers, and it holds its own under tight, modern plating. Put a seared scallop and a swipe of purée in the well, and the rim frames the plate for you.

Over 2,000 saplings, planted at the factory by the people who run the line. The production and technical heads at the factory where Ariane is made, out on the grounds putting 2,000+ in the ground themselves — one more piece of how sustainability actually works here. Our commitment to sustainable practices isn't a line in a brochure. It's built into how the porcelain gets made: clay reclaimed before firing, plates built to last years instead of seasons, and days like this one. Build things that last, waste less making them, give some back where we make them. That's the whole idea.

Before a single piece is fired, nothing goes to waste.

This is the drying rack at the factory where Ariane porcelain is made — bowls in the green and bisque stage, before glaze, before the kiln. At this stage, 100% of the clay is reclaimed. Trimmings, rejects, the pieces that don’t make the cut: all of it goes back into the body and starts again.

It’s how the line has run since day one — reduce, reuse, then fire. The porcelain that reaches your pass is what’s left after everything that could be reused already was.
