🍯 UTSAV JASHN-E-JAMUN PREMIUM PREMIX Troubleshooting: What Can Go Wrong and How Can We Rectify It?
Making Gulaab Jamun seems fairly easy, and everyone enjoys this much-loved South African-style sweetmeat. However, as with any mithai, a few challenges can arise during dough preparation, shaping, frying and soaking.
The Utsav Jashn-e-Jamun Premium Premix contains cake wheat flour, baking powder, semolina, elaichi (cardamom) and nutmeg powders. Ghee and condensed milk are added when preparing the dough.
Unlike the traditional round Indian-style gulaab jamun, our South African-style Gulaab Jamun is shaped into elongated, finger-length pieces.
Let's look at some common problems, their possible causes and how we can achieve better results.
1. THE DOUGH IS TOO DRY OR CRUMBLY
Possible causes: ❤️ Insufficient condensed milk. ❤️ The dough has not rested long enough for the semolina to absorb moisture.
How to rectify it: ✔️ Check that the prescribed quantities of ghee and condensed milk have been added. ✔️ Allow the dough to rest briefly before making any adjustments. ✔️ If the dough remains crumbly, add a little condensed milk at a time, mixing gently until it comes together.
Avoid adding too much liquid at once, as this can make the dough sticky and difficult to shape.
2. THE DOUGH IS TOO SOFT OR STICKY
Possible causes: ❤️ Too much condensed milk has been added. ❤️ The quantities of ghee and condensed milk are not correctly measured. ❤️ The dough has not rested sufficiently.
How to rectify it: ✔️ Allow the dough to rest briefly before adjusting its consistency. ✔️ Check your measurements against the recommended recipe. ✔️ Avoid adding large quantities of extra flour, as this may affect the texture of the finished Jamuns.
Remember, the dough should be soft enough to shape but firm enough to hold its elongated form.
3. THE JAMUNS DEVELOP CRACKS WHILE SHAPING
Possible causes: ❤️ The dough is too dry. ❤️ The ingredients have not been mixed evenly. ❤️ The dough has not been shaped smoothly.
How to rectify it: ✔️ Check the consistency of the dough before shaping. ✔️ Mix gently until the ingredients are evenly combined. ✔️ Roll each portion gently between your palms to create a reasonably smooth surface. ✔️ Smooth out deep cracks before frying.
A little note about cracks: Small surface cracks are not necessarily a sign of failure. Slight cracks may occur naturally during frying. However, deep cracks and open seams should be avoided because they can cause the jamuns to break apart during frying or soaking.
♥ WHEN THE JAMUNS DEVELOP GENTLE CRACKS WHILST FRYING , IT'S A SIGN OF WELL MADE DOUGH. THE CRACKS ALLOW FOR SYRUP TO ABSORB QUICKLY AND EVENLY.
4. THE JAMUNS BREAK OR FALL APART DURING FRYING
Possible causes: ❤️ The dough is too soft or has insufficient binding. ❤️ The oil is too hot or too cool. ❤️ The jamuns are handled too roughly before their surfaces have firmed up.
How to rectify it: ✔️ Check the consistency of the remaining dough. ✔️ Ensure that the finger-shaped pieces hold their shape. ✔️ Maintain a steady frying temperature. ✔️ Handle the jamuns gently, especially during the initial stages of frying.
Avoid overcrowding the pan, as this can cause the oil temperature to fluctuate.
5. THE JAMUNS ARE TOO DARK OUTSIDE BUT UNDERCOOKED INSIDE
Possible causes: ❤️ The oil is too hot. ❤️ The jamuns are thicker than intended. ❤️ The frying time is too short for their size.
How to rectify it: ✔️ Reduce the heat and allow the oil temperature to stabilise. ✔️ Shape the jamuns into reasonably uniform pieces. ✔️ Fry them slowly and evenly so that the centres cook before the outsides become too dark.
Remember, a beautiful brown colour does not necessarily mean the centres are fully cooked!
6. THE JAMUNS ARE HARD OR DENSE
Possible causes: ❤️ The dough is too dry. ❤️ Too much additional flour has been added. ❤️ The dough has been overworked. ❤️ The frying temperature is too high, causing the outside to cook too quickly.
How to rectify it: ✔️ Measure the ingredients accurately. ✔️ Avoid adding unnecessary flour during shaping. ✔️ Mix gently rather than kneading the dough excessively. ✔️ Maintain a controlled frying temperature to allow the jamuns to cook evenly.
If the jamuns are already hard, soaking may soften them to some extent, depending on the cause. However, syrup cannot always correct a dense texture caused by incorrectly prepared dough or improper frying.
7. THE JAMUNS DO NOT ABSORB THE SUGAR SYRUP PROPERLY
Possible causes: ❤️ The syrup is too thick. ❤️ The jamuns are too dense or hard. ❤️ The syrup temperature is unsuitable. ❤️ The soaking time is insufficient.
How to rectify it: ✔️ Prepare the syrup according to the recommended recipe. ✔️ If the syrup is excessively thick, adjust it carefully with a little water. ✔️ Follow the recommended syrup temperature and soaking instructions. ✔️ Allow sufficient time for the syrup to pe*****te the jamuns.
The aim is to achieve good syrup absorption without making the jamuns excessively soft.
8. THE JAMUNS BECOME TOO SOFT OR MUSHY IN THE SYRUP
Possible causes: ❤️ The centres are undercooked. ❤️ The jamuns are too fragile. ❤️ The syrup temperature is unsuitable. ❤️ They have been soaked for too long.
How to rectify it: ✔️ Ensure that the jamuns are properly cooked before soaking. ✔️ Follow the recommended syrup temperature. ✔️ Transfer the jamuns into the syrup gently. ✔️ Monitor the soaking time and remove them when they have reached your preferred consistency.
Remember, the ideal texture is a matter of personal preference!
9. WHICH IS BETTER: HOT JAMUNS IN COOL SYRUP OR COOLER JAMUNS IN HOT SYRUP?
This is a topic that often sparks discussion among mithai makers!
Some cooks prefer placing freshly fried, hot jamuns into cooler syrup, while others prefer a different temperature combination.
The important thing is to follow a consistent method that works well with the Utsav Jashn-e-Jamun Premium Premix and gives you the texture you enjoy.
In my family, we prefer our jamuns to be firm but not dry, with approximately 80% syrup absorption.
We enjoy a jamun that has absorbed enough syrup to be sweet and flavourful but is not overly soft, soggy or mushy.
Ultimately, you decide which texture your family prefers. ❤️
⚠️ A NOTE ABOUT CONDENSED MILK
Please pay attention to the type of condensed milk used.
Italiana Condensed Milk may unfortunately not be suitable for preparing Gulaab Jamun.
Different condensed milk products can vary in consistency and composition, which may affect the dough and the final result.
❤️ A FEW IMPORTANT REMINDERS
✔️ Measure the ghee and condensed milk accurately. ✔️ Allow the dough to rest as directed. ✔️ Shape the jamuns into uniform, finger-length pieces. ✔️ Avoid overworking the dough. ✔️ Maintain a steady frying temperature. ✔️ Ensure that the centres are properly cooked before soaking. ✔️ Follow the recommended syrup preparation and soaking instructions. ✔️ Remember that the desired sweetness and softness may differ from family to family.
