Fall feasting 🍂🍁
fall is the season for lots of cooking, which ultimately means lots of food,
which ultimately means lots of food photography. so instead of leaving (pun intended) it up to fate to nail the perfect shot of my food spread, I use Adobe Lightroom on Mobile to ensure I get the shot I need. Generative Remove is the biggest game changer to my phone photography. I can clean up my
plates and remove clutter from my counter within seconds. Then by adding a Film-inspired Preset my photo feels cozy, warm, inviting, and bold 🍂🍁 download Lightroom on mobile to make sure your photos are just as good as mine 😉

RECIPES 👨‍🍳

yuzu lemon curd 🍋
1. In a pot, mix 1 1/4 cup sugar, zest of two lemons, 5 egg yolks, 1 egg, 1/2 cup yuzu juice, 1/2 cup lemon juice.
2. Whisk over medium-high heat until thickened. Dump into a container, stir in 3 tbsp butter, 2 tsp orange blossom water (optional) and refrigerate.

earl grey scones ☕️
1. In a large bowl, whisk 1/3 cup sugar, 2 earl grey tea bags, 2 3/4 cup all purpose flour, 1 tbsp baking powder, 1/2 tsp salt.
2. In a measuring cup, whisk 1/2 cup milk, 2 eggs, and 2 tsp vanilla. Stir into dry ingredients. Dump out onto a floured counter, pat to 1” thick. Cut out scone rounds with a cookie cutter. Freeze while you preheat oven to 425F.
3. Brush scones with milk, sprinkle with raw sugar, and more earl grey tea. Bake scones for 18-20 minutes.

Part2; tea sandwiches 🍞
1. Assemble roast turkey, green goddess dressing, and avocado on whole wheat bread. Cut into tea sandwiches.
2. Assemble egg salad on white bread. Cut into tea sandwiches.
3. Assemble scallion cream cheese, sliced cucumber, smoked salmon, everything bagel seasoning on whole wheat bread. Cut into tea sandwiches.

tiramisu bday cake pt. 2 🎂

RECIPE COMPONENTS

almond cake layers 🍰
1. Mix 6 egg yolks with 6 tbsp justins almond butter, 1.5 cups sugar, 1/2 cup water, 1/2 cup neutral oil, 2 tsp vanilla.
2. Fold in 4 tsp baking powder, 1/2 tsp kosher salt, 1 3/4 cup all-purpose flour (220g). Set aside.
3. Whip 6 egg yolks with 1/4 tsp kosher salt and stream in 1/2 cup sugar. Whip until stiff peaks form. Fold into batter.
4. Split batter into 2 parchment lined and greased baking sheets. Bake for about 18 minutes at 350F. Let cool.

vanilla rum cake soak 🍹
1. Mix about 3/4 cup milk, 1/4 cup tentoonerum dark rum (or white rum), 1 tbsp nielsenmassey vanilla extract

mascarpone mousse 🧁
1. Whip 4 egg yolks with 1/3 cup granulated sugar over a double boiler until warm to the touch. Whip with an electric mixer until ribbony and light. Beat in 12 oz belgioiosocheese mascarpone, 1/2 tsp salt, and 1 tbsp vanilla.
2. In a separate large bowl, beat 1.5 cups heavy cream until it holds stiff peaks. Add mascarpone mixture and beat until stiff peaks hold. Refrigerate.

white chocolate coffee ganache ☕️
1. Heat 300g heavy cream, 1 tbsp instant coffee, 1/2 tsp salt over medium heat until simmering. Also sprinkle 1 tsp gelatin over 1 tbsp water in a small bowl. Pour cream over 300g ghirardelli white chocolate. Add gelatin. Stir to combine. Set in fridge.
