Equipment

Electric Hand Mixer
Plastic Wrap
Ruler
Large Baking Sheet
Silicone Mat or Parchment Paper

Ingredients

Swirled Christmas Cookies
1 cup (2 sticks) unsalted butter, room temperature 226g
1 1/4 cups granulated sugar 250g
1 large egg, room temperature 56g
2 tsp almond extract 10g
1 tsp vanilla extract or vanilla bean paste 5g
3 cups all-purpose flour 390g
1 tsp cornstarch 3g
1 tsp baking powder 4g
1 tsp fine salt 6g
1 cup Christmas sprinkles I used nonpareils but jimmies work too
red and green gel food coloring

Instructions

Swirled Christmas Cookies
In a large bowl or the bowl of a stand mixer, beat 1 cup (2 sticks) unsalted butter and 1 1/4 cups granulated sugar and mix on a medium-high speed for a couple of minutes, until the mixture becomes lighter in color.
Add in 1 large egg, 2 tsp almond extract, and 1 tsp vanilla bean paste or vanilla extract. Mix on a medium speed until incorporated. Scrape the sides and bottom of the bowl with a rubber spatula as needed.
Then, add 3 cups of flour, 1 tsp cornstarch, 1 tsp baking powder, and 1 tsp fine salt to the butter mixture and mix at a low speed until it is JUST incorporated. Scrape the sides and bottom of the bowl with a rubber spatula to make sure everything is properly mixed together.
At this point, the dough should still be pretty thick. Divide the dough into three equal-sized portions (about 10.75 oz. or 305g each). Leave one uncolored, and use gel food coloring to color one portion green and the other red. Wrap each portion of dough in a piece of plastic wrap. I like to flatten the dough out into a rectangle that's about 1/3 inch tall to make it easier to roll out once it's chilled. Try to make sure the cookie dough portions are similar in size to make it easier to stack them together later.
Chill the dough in the fridge for about 30 minutes, in the freezer for 10 minutes, or in the fridge overnight. If you chill the dough overnight, let it sit out at room temperature for about 5 minutes before trying to roll it out. This will make it easier to roll out.
Preheat the oven to 350 F / 175 C 30 minutes before you plan to cut the cookies, and line two large baking sheets with silicone baking mats or parchment paper. Set aside.
Unwrap each portion of cookie dough and lay the plastic wrap flat on your counter. We will be rolling out the cookie dough on the plastic wrap to make cleanup a breeze and to make it easier to cut the cookies.
Roll out each portion of chilled dough to be about 7x12 inches. Lay out a piece of parchment paper, then stack the dough on the parchment paper in the following order: green on bottom, white in the middle, and red on top. Use a rolling pin to gently roll over the stacked cookie dough and stick together.
Trim the edges with a sharp knife to get rid of any uneven parts. Cut one of the long sides at an angle, so that you have slightly less red than green on that edge. This will give the cookies a more defined spiral. Start rolling the cookie dough from this edge.
Carefully roll the cookie dough into a long log with a tight spiral. I find that pulling up the parchment paper and using it to help roll the cookie dough onto itself makes the process easier. Once the cookie dough is rolled, use your finger to gently spread the green cookie dough over the seam and seal the log.
Pour 1 cup of Christmas sprinkles into a rimmed baking sheet and roll/press the cookie dough firmly in the sprinkles until it's fully coated. Nonpareil sprinkles or jimmies both work.
Use a sharp knife to slice cookies that are about 1/3 inch thick. The cookie dough should still be cold enough to keep its shape as you cut. If the log isn't keeping its shape or looks like it's getting smushed as you cut it, pop the log into the fridge to firm it up for 15-30 minutes. Place the cookies on the prepared baking sheets, spacing them about 2 inches apart. The cookies will spread a bit as they bake, so they need a little room.
Bake one sheet of cookies at a time. Bake for 12-14 minutes on the middle rack of your oven (bake time can vary a lot based on the size and thickness of the cookies). Rotate the pan halfway through to help them bake more evenly. Keep a close eye on the cookies and be sure to pull them out before the edges start to brown. When in doubt, err on the side of undercooking! The cookies will continue to firm up on the pan as they cool. The end pieces always end up looking a bit wonky once they're baked, so I consider those my taste-test cookies! Let the cookies cool on the pan for 15 minutes, then move them to a wire rack to finish cooling.
Let the baked cookies cool fully on the pan, then enjoy! These can be stored in an airtight container at room temperature for up to 5 days.

Notes

This recipe can be used to make about 20 swirled cookies. The yield and bake time will vary based on how thick you choose to cut them.
This recipe can be doubled to increase the yield if needed.

Ingredients

1 Can Cream of Chicken Soup
1 Cup Sour Cream
3/4 Cup Milk
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Black Pepper
1 tsp Herbs De Provence or 1/2 tsp poultry seasoning
4 Cups Cooked, Shredded Chicken I used a rotisserie chicken, but any cooked chicken will work
1 10 oz Bag of Frozen Mixed Vegetables, thawed
11.36 oz Box of Red Lobster Cheddar Bay Biscuit Mix
3/4 Cup Cold Water
1/2 Cup Shredded Sharp Cheddar Cheese
4 tbsp Melted Butter

Instructions

Preheat the oven to 425°F
In a large bowl, combine the cream of chicken soup, sour cream, and milk. Mix in your seasonings and stir in the cooked chicken and thawed mixed veggies.
Spread the chicken mixture into a greased 9x13 baking dish and bake for 15 minutes. This initial baking helps to heat the filling and meld the flavors together.
While the filling is baking, prepare a box of cheddar bay biscuits according to the package instructions. (The 3/4 cup water and 1/2 cup of cheese).
Once the filling is ready, spread the biscuit dough on top and bake for an additional 15-18 minutes until the crust is golden brown and cooked through.
Mix the melted butter with the seasoning packet that comes with the biscuits. Brush all over the top of the casserole. Sprinkle with dried parsley for a pop of color. Serve hot and enjoy!
Notes
Making Ahead: You can prepare the chicken filling (cream of chicken soup mixture combined with chicken and veggies) ahead of time. Store it in an airtight container in the refrigerator for up to 2 days. When you're ready to bake, simply spread the filling into the greased baking dish, add the biscuit topping, and bake as directed.
Freezing: You can assemble the entire dish (filling and biscuit topping) and freeze it before baking. Make sure to use a freezer-safe baking dish or transfer it to a suitable container. Cover the dish tightly with plastic wrap and then aluminum foil to prevent freezer burn. It can be frozen for up to 2-3 months. When you're ready to bake from frozen, there’s no need to thaw. Preheat the oven to 425°F and bake for about 45-60 minutes, or until the filling is bubbling and the biscuits are golden brown. You may need to cover it with foil for the first half of baking to prevent over-browning.

Ingredients

8 ounces Cool Whip whipped topping thawed
24 ounces strawberry-flavored candy melts
1 pound vanilla almond bark
sprinkles

Instructions

Line an 8x8 dish with parchment paper.
Place the whipped topping in a large bowl and set aside.
In a microwave-safe bowl melt the strawberry candy melts in 30-second intervals, stirring in between each interval until the chocolate is smooth and melted. Make sure not to overcook because it will cause the chocolate to seize.
Set aside to cool slightly.
Stir the melted strawberry candy melts into the whipped topping and stir until combined.
Pour the candy into the prepared pan and smooth out until even. Place in the freezer for at least 1 hour, but up to overnight.
In a microwave-safe dish melt the almond bark in 30-second intervals, stirring in between each interval until the almond bark is melted and smooth.
Remove the candy from the freezer and cut into 20 equal pieces. The candy will still be pretty sticky, so your squares may not be perfectly shaped - it's ok!
Using 2 forks, dip each piece of candy into the melted almond bark and place it onto a tray lined with wax paper.
Immediately sprinkle each dipped candy with sprinkles. Repeat with all the squares.
Let set up in the fridge for at least 10 minutes before serving.

Notes

Candy can be stored in an airtight container in the refrigerator for up to 3 days.

kinder bueno chocolate roll

Ingredients

For the sponge
3 Eggs large
75 g Caster sugar
50 g Plain flour sieved
25 g Cocoa powder sieved
For filling and decoration
115 g Nutella warmed
200 ml Double cream
½ tbsp Icing sugar
½ tsp Vanilla extract or paste
For decoration
40 g Nutella warmed
1 tbsp Chopped roasted hazelnuts optional
1 ½ Kinder Bueno bar
Metric - US Customary

Instructions

Pre-heat your oven to 160C Fan/400F/Gas Mark 6, line a swiss roll tin or a baking tray with a lip, with baking paper. I grease the tin first to help the paper stick to it. The one I used was a Wilton tray that is 33.7 x 23.5 cm (13.25 x 9.25 inches)
For the sponge, whisk the eggs and sugar together with an electric hand whisk or in a stand mixer for 8 minutes until it reaches 'ribbon stage' - this is when you can drizzle some the mix into itself in a figure 8 and it doesn't sink back immediately
Gently fold in the flour and cocoa powder in three stages, folding gently and trying not to lose too much of the volume
Pour into the tin, and spread the mixture around using a palette knife. Bake for 12 minutes, if you lightly press it in the middle with your finger tip it should spring back
Remove from the oven and tip onto a clean sheet of baking paper. Remove the baking paper the sponge was baked with, then roll up the sponge, taking the clean baking paper with it, then leave to cool completely on a rack
Gently unroll the sponge and spread a layer of warmed Nutella all over it. It's much easier to spread the Nutella when it's warm, so pop it in the microwave for 10-20 seconds first
Whip up the double cream with the icing sugar and vanilla. Spread most of the double cream (save some to decorate the top) over the Nutella. Re-roll the sponge as tightly as you can, and place onto a serving plate
Warm the Nutella for decoration and drizzle or pipe it all over the swiss roll. Pipe or dollop the remaining whipped cream on top, then add the Kinder Bueno pieces and sprinkle over the chopped roasted hazelnuts
Serve immediately, store any leftovers in the fridge for 2-3 days
